FFWD: Speculoos

I don't think I've ever had proper Speculoos, or Speculaas, or Belgian/Dutch Spice Cookies. I've made them before (with the Lazy Bakers!) but since I have no idea how they are supposed to taste I don't know if what I've made is a good Speculoos. But at any rate, I enjoy them but I think I like a spicy Swedish gingersnap better.
I also have discovered that when I bake cookies, which isn't very often, I like something easy and yummy, like a good ol' drop cookie. All the fancy cookies which require rolling into logs and chilling or rolling out into sheets for cut-outs is too much for my lazy brain.
I have sandwiched caramel between spicy Swedish gingersnaps to great success, so I decided to do so with these.
The caramel was too soft so it gooped out, but I think that just makes them more delicious. I also tried nutella (good), and homemade strawberry jam (not my favorite).
All in all, a good cookie; I like the brown sugar and spices, but I would prefer something as spicy as a Swedish gingersnap.

I thought your Speculaas you made with us, the lazy bakers, turned out nice. You didn't like those? :C
ReplyDeleteI am just about to whip up 3 different batches of cookies for my husband to take into his work place. Their favourite were the oatmeal cookies with drunk raisins.
My favourite cookie is always choc chip. But I love Speculaas with a good cup of coffee!
But I agree with you, too fussy in the making of a cookie is unnecessary for a good cookie.
I remember speculaas! We learned about Santa coming on a boat from Spain. Or something like that? Guess we didn't learn it all that well. These speculaas have to be rolled out--Melinda's didn't. I'll vote for Melinda's recipe. Speaking of Melinda, she had great plans to resurrect the Lazy Bakers and have them (us) tackle doughnnuts. I'm ready.

ReplyDeleteMelinda, thanks! I did like my Lazy Bakers speculaas, but I was disappointed I didn't slice them thin enough to get crisp. Your recipe was easier as Marie points out!

Marie, oh yeah, that's right! I had forgotten all about that. Lazy Bakers take on doughnuts? I'm in!
